Mutton and Lady Finger Curry

Ingredients
·         Mutton ½ kg (with bones)
·         Lady finger ½ kg (washed, dried, sliced and fried)
·         Onion 1 (chopped)
·         Ripe tomato 5 – 6 (chopped)
·         Tomato paste 1 tbsp
·         Ginger garlic paste 1 tbsp
·         Salt to taste
·         Chili powder 1 tsp or to taste
·         Coriander powder 1 tsp
·         Turmeric powder ½ tsp
·         Green chili 2 (slit into two)
·         Fresh coriander 2 tbsp (chopped)
·         Oil 3 tbsp
·         Coconut milk powder 2 tbsp
·         Coconut paste (½ a coconut)
·         Water as required

1.     Heat oil in a pot and fry the chopped onion till golden brown.
2.     Add the ginger garlic paste and fry for a while.
3.     Then add the mutton along with all the spices, except the coconut, fry for few minutes.
4.     Add the tomato paste and add three cups of water, allow the meat to cook till it is tender.
5.     Once the meat is tender, add the coconut paste/powder dissolved in a cup of water.
6.     Add the fried lady finger cook for a few minutes.
7.     Simmer on low heat for a while and then take it off the flame.
8.     Serve with plain rice or roti.
